We grow several kinds of winter squash including butternut squash, acorn squash, delicata and kabocha. It keeps for awhile on your kitchen counter. For storage of over 1 month keep at 55 degrees.
Winter squash can be halved, baked, and stuffed with your favorite filling in the final 10 or so minutes of cooking. It can also be cubed and roasted with other vegetables or cubed and thrown in a stew. For a simple and delicious side dish, just dot winter squash with butter and a little brown sugar and bake until the flesh is soft.
