Farm News
It is always nice to get away from the farm for even just one night–and what better excuse than seeing a solar eclipse in totality? So that’s what Ben and the kids decided to do. A trip to Russelville, KY with a stop at Mammoth Cave National Park was planned with just enough advanced timing for special solar eclipse viewing glasses to arrive in the mail on time. They had a blast visiting natural sites, camping, making pinhole viewers and witnessing the eclipse without glasses during the totality. It was worth the school absence, farm work day off, and unprecedented traffic jam on the home!
The crew and I had a busy day of harvesting for the box but we loved being outside all day. We stopped to view the eclipse sharing a pair of safety glasses. My mom even drove down for the day to experience the eclipse with company. It was cool thinking that while we picked berries on land dramatic things were happening in the sky. I hope everyone got a chance to see it!

Roasted Red Peppers and Tomato Soup ( you can sub fresh basil for the thyme)
Kale and Zucchini Frittata (Greens and eggs are a good combo. Personally I’d use full fat mozzarella. I also think this dish would work with any type of cheese. )
